Jamie’s Italian Collaborates With Loseley – Fresh Local Produce Means Great Food

A creative collaboration between Loseley Park and Jamie’s Italian is a Guildford exclusive!

Head gardener Burney who manages the walled vegetable garden at Loseley Park recently invited Adam Griffin head chef at Jamie’s Italian for a tour around the extensive vegetable garden.

The garden is home to over 120 varieties of herbs grown for the main house and for sale to the public. These include many different varieties of mint, oregano, angelica, sage, sweet cicely and lemon balm.

A delicious lamb dish showcasing fresh locally grown seasonal herbs is currently on the menu for today and tomorrow. Inspired by the stunning range of flavours on offer Adam has skillfully partnered a Barnsley lamb chop (double loin) with roasted vegetables finished with a fresh herb salsa.

Adam specifically chose a traditional cut of meat, which is grilled and dressed with lemon juice and honey and rested before final assembly. Plated with freshly roasted vegetables the real star here is a salsa verde made with Loseley Park grown mint, basil, parsley, sage and summer marjoram.

I met Adam at Loseley yesterday in the herb garden where he was gathering herbs for his dish. I went to Jamie’s this morning where Adam and his team made the dish up for me (kindly improvising with a small rack of lamb as the chops hadn’t come in time, thanks Sagar).

The lamb was cooked pink on a bed of candy beetroot, courgette and red onion and drizzled with their gloriously green herb puree which unlike our recent weather shouted summer. The combination of the tender succulent meat, caramelised roasted vegetables and sweet herbs was divine. A beautifully conceived dish with a hit of seasonal flavours, I hope it will be a regular feature on the menu. It seemed only right that the sun had decided to come out in Guildford too.
