Tucked away in the scenic countryside of Little London, Albury, the William IV pub is a beautifully restored 16th-century treasure that has quickly re-established itself as a local favourite. I had the pleasure of visiting on behalf of The Guildford Dragon NEWS this week.
After a quiet reopening late last year, the William IV is now headed by Michelin-awarded chef Luke Spier, whose impressive background includes time with Gordon Ramsay, Simon Rogan, and The Clock House. But this is no flashy London-style concept. Instead, the pub offers a refined yet unfussy take on classic dining—with dishes that are both surprising and deeply comforting.
The interiors are equally charming. Think crackling inglenook fireplaces, worn oak beams, and intimate dining rooms that balance rustic heritage with tasteful modern comfort. The atmosphere was lively but not loud, and the staff were warm, attentive, and proud of what they’re part of.
A menu to remember
The food? Outstanding. Chef Spier’s team serves up beautifully plated dishes with fresh seafood brought in from Cornwall’s renowned Flying Fish, and local game sourced from Albury Park Estate. And come summer, a wood-fired pizza oven in the garden will serve up rustic flatbreads and pizzas—perfect for relaxed weekend lunches in the sun.
It’s worth noting that the menu is inclusive, with vegetarian options like the pumpkin and sage pithivier sitting alongside Josper-grilled spatchcock chicken, lamb cutlets, and an exceptional steak selection.
Wine, ale and local favourites
Wine enthusiasts will be especially pleased. Owner David Lubbock, a lifelong wine lover, has included a Fine Wine list featuring rare bottles from his personal cellar—such as a Château Talbot 2005—at prices that are genuinely generous. The drinks menu is rounded out by an array of local ales from Surrey Hills Brewery, Silent Pool Gin, and sparkling wines from Albury Vineyards.
A perfect Surrey retreat
With seating across a characterful bar, main dining areas, upstairs rooms, and a 12-seat private space at the very top of the pub, the William IV offers something for everyone—whether you’re seeking a cosy Sunday roast, a long celebratory lunch, or just a post-walk pint in the Surrey Hills.
For those in Guildford looking to escape the bustle of town without compromising on food or ambience, I can’t recommend it enough.
