What actually happens in the election count process?

Who better to ask than James Whiteman, returning officer for the Guildford constituency in this 2019 General Election and also managing director at Guildford Borough Council responsible for organising our election.

Guildford used to be one of the first to declare but now are not expected to declare until after 3am. Why is this?
